Mixed Berry Gelato

Bright, vibrant and intensely fruit-driven, this mixed berry gelato celebrates the natural sweetness and gentle tartness of ripe berries. Silky smooth with a clean, refreshing finish, it’s a beautifully balanced dessert that feels both light and indulgent — a true expression of the fruit.

Equipment

  • Saucepan
  • Ice-machine
  • Mixing bowl

Ingredients
  

  • 1 cup heavy cream
  • 3 cups whole milk
  • 1 cup granulated sugar
  • 2 Tbsp cornstarch
  • Pinch salt
  • 1 cup mixed dried
  • Barries and brandy
  • ½ tsp vanilla extract
  • 1 Tbsp mixed berry jam
  • Caramelised orange rind

Instructions
 

  • Combine the cream and 2 cups of milk in saucepan and bring to a simmer.
  • Soffen the berries in brandy
  • While cream/milk is heating put the remaining milk, sugar, cornstarch and salt in e bowl and mix.
  • Add the milk, sugar cornstarch mixture to the simmering cream/milk mixture and keep mixing over a medium till the mixture starts binding. About 15 minutes.
  • Remove pan from heat and stir in the berries, orange rind, berry jam and vanilla. Chill in refrigerator or freezer.
  • Mix again and pour in the ice-cream maker and run for about 45minutes depending what your starting temperature is.
  • Transfer the Gelato in an airtight container and place in the freezer.
