Leon’s fresh mayonnaise is all about simplicity done right — egg yolk, oil and a touch of acid brought together into a smooth, silky emulsion. Rich, fresh and beautifully balanced, it’s a small detail that elevates every dish.

Equipment

  • Standard kitchen equipment
  • hand mixer

Ingredients
  

  • 2 Eggs Yolk only 1 Tbsp Vinegar Sugar
  • 1 tsp Mustard
  • 7 dl Canola Oil Pepper and Salt
  • Worcestershire Sauce/Honey/ Lemon Juice

Instructions
 

  • Add the vinegar and a pinch of sugar, Egg Yolks, Mustard, mix.
  • Add the oil very slowly (drop by drop) at the beginning later you can add the
  • oil a bit quicker.
  • You can add Worcestershire Sauce/Honey/Lemon Juice to your preferred
  • taste.
